*Saltimbocca* — "it jumps in the mouth" — three words fused into one, naming the reaction instead of the ingredients. Food historians trace the dish itself to Brescia, adopted here only in the 1800s. But it's *"alla Romana"* on every menu in the city, indisputably Roman now, the same trick Peroni pulled with its own label. Claim something hard enough, for long enough, and the claiming becomes the history. RR
